Frittata was a success

I had to bake it longer than Dash had thought he baked his (I think this was mostly because mine was in a smaller dish (8x8square) and therefore mine was more dense and took longer to bake up. It wasn’t hard to tell that it needed longer — when I went to take it out after half an hour the middle was very liquidy still — so I put the foil back on the top and put it back in for another 15 minutes and then another 15 minutes after checking it again. At that point it was basically no longer jiggly in the middle so I sprinkled the cheese all over the top and put it back in for the cheese to melt/brown.
Next time I’d do the spinach too (Mom suggested just not telling Andy but I’m better about that — I’d tell him but I’d only use a little bit) and I’d add a bit of chopped up ham (they sell this in stores already diced) and I’d add much more cheese to the main part of the frittata… and I’d also grease the pan… for some reason I was thinking that since it was glass it wouldn’t really stick! (wrong answer ladies and gentlemen!!)
But it was delicious and it’s definitely on the “do this again” list. The other idea I had about it was making it at some point for the mahjong queens — they would really like that.

Frittata a la Dash…

Tonight on the menu is Frittata a la Dash… Dash being my friend in California — one night we were talking about food and cooking and recipes and he shared this one with me. It’s basically a crustless quiche or an omelet-type casserole that you put anything you want to in… you take a dozen eggs (or more depending on how many people you are serving… as well as Rice-A-Roni that you prepared the day before. In ours I put fresh mushroom slices, this nice mexican 4-cheese blend mix of cheeses, and some garlic salt and pepper. I was going to put some sauteed spinach (in olive oil and a bit of garlic) but when I mentioned spinach, Andy began to make faces, so that idea got nixed. Maybe another time I’ll make it for Mom & the Mahjong queens or something?
I’ll let you know how it turns out. It’s baking now, takes 30 minutes, then you put cheese on top and then put it back in til the cheese is melted/browned.
